Banana Ice Cream & Oatmeal Banana Cookie Recipe

Healthier option of a Ice Cream Cookie Sandwich and Lactose free!

Banana Ice Cream

Ingredient:

1 Ripe Banana

Directions: Peel Banana. Cut Banana into coins. Place on a freezer safe plate uncovered. Place plate into freezer for 1 to 3 hours (Placing Overnight or Earlier in the Day is fine as well). Take plate out of the freezer and add frozen banana coins into a food processor. Process 1 to 2 mins or until a Ice Cream consistency. (You may need to add a little water a tablespoon or less to process smoothly. Stop process and with a utensil move banana mixer around.)

( Feel Free to Eat a few Frozen Banana coins while you work YUM 😉 )

 

Oatmeal Banana Cookie (4 cookies)

Ingredients:

1 Ripe Banana

1 to 2 cups of Oatmeal (Depending on the size of the Banana)

Directions: Preheat oven to 350. You can use whole oats or food process the oats. Use a fork to mush the Banana or just add banana into oats in the food processor. Mix until combined.  Take mixture from food processor add into a bowl and you can use hands to make sure everything is combined well. Divide into 4 sections roll into balls. Place on a greased cookie sheet and press down balls into cookie shape. Place in oven and bake for 15 mins.

( FYI- I mix whole oats and banana by hand 😉 )
